I'll admit I don't know to much about 3D CAM. I have a small part I have designed in SolidWorks, exported as a .STL file and imported/opened in STLWorks. I want to have it cut it as a waterfall, but it only seems to want to cut on X or Y axis. Is this a limitation of the demo? For my material, the top of the drawing is the actual top of the material, and doesn't need to be machined.

It's called waterline, not waterfall. When you determine your cutting strategies, you have a choice of X, Y, or Water (line). Select waterline and the toolpath will be developed with that method.
